The secret to a great filet mignon is using a heavy cast-iron skillet and searing the steak in a mixture of oil and butter infused with garlic and herbs. So, buckle up for a rollercoaster of flavors!

Ingredients

  1. filet mignon, 16 ounces (2 steaks, about 2 inches thick)
  2. 1 tsp sea salt or kosher salt
  3. ½ tsp Diebold’s dirty dust seasoning
  4. 2 tbsp butter
  5. 1 tbsp olive oil
  6. 2 cloves garlic (smashed)
  7. 2 twigs of rosemary
  8. 2 sprigs of thyme

Method

  1. About an hour before you plan to cook, take the steaks out of the refrigerator to allow them to come to room temperature as it helps them to soak up more flavor.
  2. At the same time, preheat the oven to 400 degrees F.
  3. Once the steaks are at room temperature, thoroughly rub both sides with salt and Diebold’s dirty dust. Make sure to pat the seasoning thoroughly.
  4. Heat oil in oven-safe stainless steel or cast-iron pan. Once it is hot, add butter to it and continuously move it to avoid burning until it foams.
  5. Then add crushed garlic, rosemary, and thyme to the pan.
  6. Now add both steaks to the hot pan and sear them for 2-3 minutes on both sides to get a nice crispy layer. Make sure to constantly spoon the hot herb-infused butter onto the steaks.
  7. Then transfer the skillet to finish cooking in the preheated oven. Keep them in the oven for about 6-10mins depending upon how well you like to cook your steak.
  8. After they are done, allow the steaks to rest in the pan for at least 5 minutes to release all their juices.

Your dirty filet mignon is ready! Serve it with roast potatoes or carrots or whatever sides you like and enjoy!
